P.A.M. Juice

Last summer, Ryan and I attempted the 3-day BluePrint “Renovation” juice cleanse. We were fresh off a long trip to visit family and friends in Chicago that involved many nights eating out and a lot of wine. Admittedly, I only lasted on the cleanse for one day, but I continued to replace a meal here and there for a week or so in an effort to lighten up and give my body a break. I actually liked all of the juices in the cleanse, but one of my favorites was this pineapple, apple, mint juice (PAM). It was the second juice of each day of the cleanse. The benefits of pineapple are worth noting: tons of Vitamin C, B Vitamins, Potassium and the enzyme Bromelain, which reduces inflammation and promotes good digestion.

I’ve recently amped up my workout routine due to lack of warm weather and my girls’ sudden obsession with my gym’s Kids’ Club (thank god!). I made this PAM juice after my Booty Barre class this morning. The pineapple really sings out of the glass and tastes so, so fresh. And, the mint gives it a vibrant flavor boost. A big, tall glass almost made me forget about the next winter storm visiting us here in NY this afternoon. Almost.

I used my Breville Juicer to make this juice. I’ve had this juicer for six years and it still works like a charm. (After all these years, it is still the best selling centrifugal juicer on Amazon with great reviews.) The fruits only need to be roughly chopped and in they go!

Easy-peasy-pineapple-apple-mint-squeezy.

Pineapple, Apple, Mint Juice

Serves: 2 12-oz glasses
Ingredients
  • one pineapple (approx. 20oz), peeled and cored (I buy pre-peeled and pre-cored)
  • 4 small apples
  • 1 bunch mint leaves
Instructions
  1. Roughly chop all ingredients and push through juicer. Spoon / pour off fruit froth as desired. Enjoy!
