Cranberry and White Chocolate Chip Cookies

Ingredients
  • ⅓ cup unsalted butter, softened to room temperature
  • ½ cup packed light brown sugar
  • ½ cup white sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • ¾ cup dried cranberries, chopped
  • ¾ cup white chocolate chips
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, beat softened butter, about 1 minute. Add sugars until well mixed. Beat in egg and vanilla.
  3. In a medium bowl, whisk together the flour, salt and baking soda.
  4. Gradually add the dry ingredients to the to butter mixture and mix well. Stir in dried cranberries and white chocolate chips.
  5. Drop even spoonfuls of the batter onto baking sheets coated with cooking spray.
  6. Bake for 12-15 minutes. Cool on pan for a few minutes before transferring to wire rack.
