Cranberry and White Chocolate Chip Cookies

- ⅓ cup unsalted butter, softened to room temperature
- ½ cup packed light brown sugar
- ½ cup white sugar
- 1 tablespoon vanilla extract
- 1 large egg
- 1½ cups all-purpose flour
- 1½ teaspoons baking soda
- ½ teaspoon salt
- ¾ cup dried cranberries, chopped
- ¾ cup white chocolate chips
- Preheat the oven to 350 degrees.
- In a large bowl, beat softened butter, about 1 minute. Add sugars until well mixed. Beat in egg and vanilla.
- In a medium bowl, whisk together the flour, salt and baking soda.
- Gradually add the dry ingredients to the to butter mixture and mix well. Stir in dried cranberries and white chocolate chips.
- Drop even spoonfuls of the batter onto baking sheets coated with cooking spray.
- Bake for 12-15 minutes. Cool on pan for a few minutes before transferring to wire rack.
