We moved to New York last year not having any friends in our new town. It can be intimidating and scary to move somewhere with no support system or social network. Luckily, thanks to friend-of-a-friend introductions and our kids’ activities, we have made many new friendships that will last a lifetime.

One my of new good friends in town is Courtney. We immediately bonded because we have baby girls that are about the same age, love social outings and entertaining, and we share a wildly sarcastic sense of humor. We’ve shared many glasses of wine while discussing the latest diaper rash, favorite makeup products and our wishful hopes for parent-only vacations one day.

I asked Courtney to prepare a festive holiday cocktail for our dinner party last weekend. Of course, she came to the table with several delicious recipes, but my favorite was her pomegranate champagne cocktail. It is an easy, but luxurious cocktail to serve and sip for the holidays.

The beauty of this drink recipe is that you can add as much pomegranate juice as you want to add flavor and color to the champagne. (You also don’t need the pom juice if you don’t have any on hand.) The pomegranate arils are so pretty as some move to the top of the glass with the champagne bubbles.

The rosemary sprig is optional but is a nice garnish. It’s actually quite interesting to smell the aroma of the rosemary while you are sipping your champagne!

This drink would be perfect for New Year’s Eve celebrations, so I hope you try it. Cheers to a Happy New Year!

Pomegranate and Rosemary Champagne Cocktail

Serves: 6 glasses
Ingredients
  • one bottle Champagne
  • 1 cup pomegranate arils (seeds)
  • 1 small bottle pomegranate juice
  • 6 rosemary springs
Instructions
  1. Fill each glass halfway with Champagne. Add a touch of pomegranate juice to each glass until desired color is achieved. With a spoon, gently drop in pomegranate arils. Garnish each glass with a sprig of rosemary.
